  • 300 grams of unsalted butter
  • 150 grams cocoa powder
  • 450 grams of sugar
  • Four eggs
  • 400 grams sifted flour
  • One tablespoon vanilla extract
  • 220 millilitres of milk
  • One teaspoon baking soda
  • Pinch salt
  • 225 millilitres Cherry Coke
  • One 250 gram jar of maraschino cherries, reserving 50 millilitres of the liquid.


Preheat the oven to 185ºc and prepare a deep cake pan with a light grease. Alternatively, you can make a layered cake with two sandwich tins.

Cream the sugar and butter with a paddle attachment until it is fluffy and light. Beat eggs with the vanilla and add this gradually to the creamed butter.

Sift the baking soda, salt, flour and cocoa. In a jug, mix the milk, cherry liquid, and Coca Cola Cherry. Mix the flour and liquids into the butter mixture alternately. Chop the cherries and fold them into the batter.

Pour your cake batter into the prepared tin and bake for approximately forty minutes. Shallower sandwich tin cakes will take a little less time, so keep an eye on them. A skewer inserted into the centre should come out clean. Cool the cake completely on a wire rack.
